I just used usb-boot to copy my Bookworm RaspianOS Desktop running on a RPi5 from a 64GB SD card to a 4TB Disk. Everything worked like a charm

May I suggest an enhancement?
I noticed the root partition was expanded from 64GB to 4TB by usb-boot. But I don't need a huge 4TB root partition. I need additional smaller partitions for other purposes. So I had to shrink the root partition back to 64GB when usb-boot finished. Would be great to have an additional selection in your TUI whether the root file system should be expanded. It would be even better to be able to define the root partition size on the target device. But I think that's overkill. Just expand the root partition to the available space or keep the original root partition size.
