For tachometers it often works better to count pulses for a time period rather than time the period of pulses.
If you need one second updates of the speed, simply count the pulses for one second.
You'll get best performance with the longest time period usable for your application (via the inherent averaging of counting).
So if you only need a reading every minute, counting pulses for one minute will give you a very high resolution and accuracy value of the speed.
