For the flash, W25Q16JVUXIQ (as used on the Pico itself) obviously works electrically and I've had no problem getting the smaller package soldered. But that is only 2Mbyte; unfortunately they don't make the W25Q128 in that package. The W25Q128JVPIQ looks a sensible choice - a bit smaller than the SOIC package - but I haven't tried that one myself.
For the 3V3 regulator, there's thousands of choices. The 3-pin XC6206P332MR-G (Torex) is very small though slightly more expensive than other options and slightly limited on power for larger designs. If you need a little more power, there's lots of choices in SO23-5 package; I tend to use AP2127K-3.3TRG1 (from DiodesInc) but there's lots out there that fit the same footprint (though some need an extra capacitor on pin 4; this one doesn't).
