Should work; presenting a Pi as a USB Memory Stick which I guess would be FAT formatted.
The hardest part, beyond getting it configured as if a Memory Stick which the host recognises, may be in knowing when the host has transferred the data to the Pi. If the host ejects the drive you may be able to detect that or you might need a button to unmount the exposed file system.
After that it should be easy enough to then mount the file system locally, find the files written, send them, or do whatever is needed.
Don't forget to cut the +5V wire in the cable between the Pi and Host to prevent back-feeding and supply contention.
