Thanks for the responses. Yes I am running bookworm, sorry about the typo. I now realise that nm is creating temporary connection files under /var/run/NetworkManager/system-connections at boot time. Not where I expected them to be. The directory /etc/NetworkManager/system-connections remains empty.
I moved the 'Wired connection 1.nmconnection' file to the system-connections directory under /etc and renamed it to 'ethernet.nmconnection'. I then edited the name parameter in it to 'ethernet' and deleted the NetworkManager metadata section.
Hopefully this will allow me to use the various tools to edit this new file, and for it to be pesistent.
I don't know is there is a more straightforward way of achieving this!
