how best should I proceed?
My suggestion: Give up battling to solve issues arsing from using an Operating System version that was superceded in the autumn of 2017.

With the current recommended and supported RasPiOS Bookworm the task of creating an access point becomes a trivial one-command operation from the cli. Or there is a textual GUI if you prefer.

minidlna is also a trivial installation directly from apt.

I have no experience with the 'foreign' filesystems you wish to use, but it seems likely that using them will be easier with a supported release of the OS. (I load media onto my minidlna server by simply uploading files over its network connection, not by juggling with removable mass storage.)
