With the current recommended and supported RasPiOS Bookworm the task of creating an access point becomes a trivial one-command operation from the cli. Or there is a textual GUI if you prefer.

minidlna is also a trivial installation directly from apt.
I have no experience with the 'foreign' filesystems you wish to use, but it seems likely that using them will be easier with a supported release of the OS. (I load media onto my minidlna server by simply uploading files over its network connection, not by juggling with removable mass storage.)
