Adding a script launched every 5 mins (via cron) to force activity on a Pi that has a tendency to drop from the wireless network appears to be a common workaround. E.g. viewtopic.php?p=2192253#p2191916
I don't think this is a problem related to inactivity: the connection has been failing while I've been doing stuff on it. Not stuff that should cause a problem.
Other possible causes are poor wireless reception (look for “good” or “excellent” reception, no less) or insufficient power supply to the Pi.
I had been having getting "Undervoltage" reports, but I think I have solved that, and I don't think anything has moved significantly, so it's odd that the signal strength would change so.
Maybe I should just put a WiFi repeater in the room with them: they need to talk to each other more than they need to talk to t'internet.
If nothing helps, consider shutting down some clients of the AP and see if the Octopi starts working better. An AP can handle between one and two dozen concurrent clients, no more.
I don't think it ever has many clients and most of the time, most of them are not busy...
OTOH sometimes two or more are streaming video... Maybe I'll see if there's any correlation with that and the problem.
